Une dispersion est un m\u00e9lange finement divis\u00e9 d'au moins deux liquides normalement non miscibles.<\/p>\n<p>Un bon exemple de dispersion quotidienne est l'\u00e9mulsion stable \u00e0 long terme, un m\u00e9lange d'huile et d'eau. Si l'on verse de l'huile dans de l'eau, l'huile flotte d'abord \u00e0 la surface de l'eau sans se m\u00e9langer \u00e0 l'eau. L'huile est la phase dite interne, l'eau la phase externe.<\/p>\n<p>Pour produire une dispersion, on utilise des forces de cisaillement \u00e9lev\u00e9es lors de la dispersion. On obtient des forces de cisaillement \u00e9lev\u00e9es en utilisant un agitateur aux propri\u00e9t\u00e9s appropri\u00e9es, comme par exemple le disque de dispersion, et des vitesses de rotation \u00e9lev\u00e9es.<\/p>\n<p>Pour stabiliser la dispersion temporaire, on utilise ce que l'on appelle des \u00e9mulsifiants. Les \u00e9mulsifiants lient les deux substances \u00e0 l'interface, car ils peuvent, dans notre exemple d'\u00e9mulsion huile-eau, se lier d'une part \u00e0 l'eau et d'autre part \u00e0 l'huile. La dispersion devient ainsi une \u00e9mulsion stable \u00e0 long terme.
